There's an almost hidden Parisian street called Rue Mouffetard in the non-touristy 5th arrondissement. It's here that one can find an outdoor market, quaint shops and charming restaurants - all of which have a wonderful local breeziness to them.
You will discover regional French, Italian and Turkish restaurants here, some with a variety of 3-course set menus. One former decade-long Rue Mouffetard restauranteur, Rainer Plinge, agreed to share his scrumptious cheese fondue recipes. His restaurant was often packed full with hungry patrons turned away!
Don't forget about the type of bread accompanying the fondue, as bread baked the french way adds tremendously to the culinary experience. Now get your fondue set ready for the following mouth-watering recipes.
3 Cheese Fondue (La Fondue à Trois Fromages)
1. Rub the caquelon with a clove of garlic to set a hint of flavor.
2. Add cheeses such as le Beaufort, le Comté, and l'Emmenthal in equal thirds.
3. Mix over heat and add a little bit of dry white wine (or lemon for those who prefer not to use alcohol).
4. Finally, add a pinch of nutmeg and a little bit of ground black pepper.
5. Serve with small pieces of well-baked bread, and steamed potatoes cut in cubes.

La Fondue Provençale (An American favorite)
1. Rub the caquelon with a clove of garlic to set a hint of flavor.
2. Add le Comté first, followed by l'Emmenthal and Gruyère, keeping the cheese mixture very thick.
3. For the Provençale twist, add peeled tomatoes along with "herbes de Province" and a hint of black pepper.
4. Serve with small pieces of well-baked bread, and steamed potatoes cut in cubes.

Country Fondue (La Fondue Campagnarde)
1. Rub the caquelon with a clove of garlic to set a hint of flavor.
2. Add Emmenthal, Gruyère and Cantal cheeses.
3. When the cheeses have melted, add small pieces of cut bacon and mushrooms.
4. Season with herbs.
5. Serve with small pieces of well-baked bread, and steamed potatoes cut in cubes. A very hearty meal!

After more than a decade in Paris, Rainer sold his restaurant in Paris and is now back in Germany working on his next venture of a restaurant / sports bar Zum Alten Kloster. With a great location on a busy pedestrian street in Gelksenkirchen, it caters especially to avid soccer (football) enthusiasts.
